  • 1 tablespoon cooking wine
  • 1 tablespoon soy sauce

  • 2 tablespoons oil

Instructions:

  1. Clean the fish fillets by removing the scales and gills, then slice them.

  3. In a bowl, marinate the fish fillets with cooking wine, soy sauce, oyster sauce, sugar, salt, black pepper, and the Sichuan peppercorn-chili powder for 15 minutes.
  4. Heat oil in a wok or large skillet over medium heat, stir-fry the ginger and garlic until fragrant.
  5. Add the marinated fish fillets and stir-fry until the fish changes color.
  6. Add an appropriate amount of water, bring to a boil, then reduce heat and simmer for 10 minutes.
  7. Thicken the sauce and serve.
