Recipe | Chinese Marinade Spices

Here’s a classic Chinese Marinade Spice Blend (卤料) that contains Angelica Dahurica we shared in our last post:

Ingredients:
- 白芷 Angelica Dahurica (bai zhi) 20g
- 八角 Star Anise 4-5 pieces
- 肉桂 Cassia Cinnamon 2 rolls
- 草果 Amomum Tsao-Ko 2-3 pieces
- 小茴香 Fennel 1 teaspoon
- 花椒 Sichuan Peppercorns 1 teaspoon
- 生姜 Ginger 3 slices
- 葱 Green Onion 1 stalk
- 料酒 Cooking Wine 2 tablespoons
- 生抽 Light Soy Sauce 3 tablespoons
- 冰糖 Rock Sugar 2-3 pieces
- Water 800 ml
- Meat of choice

Chinese Marinade Spices

Instructions:

1. Preparation: Rinse the Angelica Dahurica, slice the ginger, and cut the green onion into sections.

2. Fry the Spices: Heat some cooking oil in a pan, add star anise, cinnamon bark, amomum tsao-ko, fennel seeds, and Sichuan peppercorns. Fry the spices on low heat until fragrant.

3. Add Ginger and Green Onion: Add sliced ginger and green onion sections to the pan, continue frying until aromatic.

4. Add Angelica Dahurica: Add the rinsed Angelica Dahurica, stir evenly.

5. Seasoning: Pour in cooking wine and light soy sauce, stir well.

6. Add Water and Simmer: Add water, put in rock sugar, and stir. Bring to a boil over high heat, then simmer over low heat for 30-40 minutes to let the flavors infuse.

Star Anise and Angelica Dahurica help to remove the unwanted smell of meat.
